As the premier chef and hospitality school in the country, the intention of George Brown College and the Centre for Hospitality and Culinary Arts is to meet the current and future needs of the hospitality industry by growing its capacity to prepare and graduate the greatest possible number of best in class food and service professionals. To accomplish this initiative, George Brown College has undertaken an ambitious project that has renewed and expanded its facilities. Included in this undertaking was the construction of The Chefs' House, a fully functioning restaurant that serves as a real-time learning experience for our students and as a destination of choice for the dining public. The Chefs' House is staffed by our students from several different programs who are learning first hand what it takes to work in the hospitality industry. Excellence in hospitality and culinary training is the school's principal mandate.</p>

Opened by Keith McNally in the spring of 1997, Balthazar offers a French menu prepared by chefs de cuisine Riad Nasr and Lee Hanson. Diners can also choose from an extensive wine list, a raw seafood bar, and breads and pastries from Balthazar bakery.</p>
<p>Balthazar is renowned for its exceptional design. The building was converted from a leather wholesaler's warehouse to an airy space that can accommodate over 200 people in the dining room and at the zinc bar. Balthazar is also available to host your Special Event.</p>

The story began in 1974 when Emmanuel Katsamakis moved to Toronto from Athens, Greece. He opened his first bakery in 1976 with a simple vision; offer the freshest cakes and pastries, made with the finest ingredients and the people will come; and they did. People from all over Toronto came to experience his traditional Greek pastries such as his famous Baklava, Galaktoboureko (custard pie), and Loukoumades (honey balls).</p>
<p>By 1999 Emmanuel's two oldest children, Constantine and Areti, had joined their father in the family business. The youngest member of the family, Nicholas, would follow his elder siblings soon after.</p>
<p>Working in the baking industry from a young age, they became keenly aware of new trends and changes in customer habits and tastes, which greatly influenced the creation of the Select Bakery vision.
